It is time for a warm, comforting soup and I have the perfect healthy eating recipes for our fall harvests. Served in a bread bowl or with a crusty loaf of bread and a crispy, green salad, you have the perfect evening meal or weekend lunch. I actually found that if I refrigerated it overnight and heated the soup up the next day, it had even more flavor. You and your family will love this healthy eating recipes soup. Healthy Eating Tips (HET): Poke holes in the potatoes and microwave until potato is tender. Sauté/caramelize the onion if you do not like a strong onion flavor. Ingredients: 2 Granny Smith apples, seeded and diced *(HET1) 2 ½ cups of chicken broth (low sodium) (Option: vegetable broth) ½ onions (HET2) 2 stalks of celery (HET3) 1 baked sweet potato (HET5) ½ tsp of dried thyme 1 pinch of cinnamon to taste (HET6) 1 cup of sharp shredded cheese 1 pinch of cayenne (optional) Place all the ingredients, except the cheese, into a pot and heat. With an emulsifier blend ingredients together until it has a creamy consistency. If you don’t have an emulsifier, let soup cool and blend in a blender. Reheat. Add cheese and blend slightly to the consistency you desire. Top with cheese, apples or sour cream as a garnish. Healthy Eating Tips (HET)
